Machacado Con Huevo a la Mexicana

Machacado "con huevo" or in english known as "with egg" is a dish that consists of processed dried beef. When any Mexican dish is labeled as "a la Mexicana" it usually tends to mean it's a bit spicy and contains peppers, onions, and tomatoes. Machacado con huevo is one of my most favorite Mexican breakfast dishes growing up as a kid, and well I can probably still say that it's probably still my favorite dish today.
Ingredients
- 1/2 Cup of Machacado (Dried Shredded beef)
- 5 Eggs
- 1/2 Onion diced
- 1/2 Tomato diced
- 1/2 Serrano Pepper diced
- Teaspoon of oil
- Salt (Warning: Machacado meat is usually already salty)
How to Make
- Add oil to pan on medium heat and insert the machacado.
- Allow machacdo to heat up and cook a little, as well as soak up a little of the cooking oil.
- After about a minute, add the onions, peppers and onions to start cooking the flavor into the machacado. You can also place a cover on pan to keep in the moisture
- While letting the Machacado and other ingredients simmer together begin to mix the eggs in a bowl to make a more even cook once it's poored into the pan.
- After your done mixing the eggs poor it into the pan and scramble until cooked.
- Your done, put Machacado con Huevo's into a plate and serve.
- Usually you would allow individuals to add salt if they wish to add more. Quite often it's never needed.
