La machaca con huevo es tradicional del norte de México. Se sirve como almuerzo o incluso como cena. Se puede preparar a la mexicana con chile o sin él.

Ingredients

  1. 1/2 Cup of Machacado (Dried Shredded beef)
  2. 3 Eggs
  3. 1/2 Onion diced
  4. 1/2 Tomato diced
  5. 1/2 Serrano Pepper diced
  6. Teaspoon of oil
  7. Avocado *Optional

How to Make

  1. Add oil to pan on medium heat and heat up the oil
  2. Once the oil is heated, add the onion, you want to cook it slightly so that it gets a little bit of transperancy, make sure it doesn't harden or burn.
  3. after about a minute or when you feel the onion has been cooked, add the chile or "serrano pepper diced" and the 1/2 cup of Machacado.
  4. Once the dried beef is cooked and begins to slightly harden you want to add the tomatoes. You add tomatoes towards the end because they're a lot softer and you don't want to begin to mush and blend the tomatoes.
  5. You only want to cook the tomato slightly so that it changes a little in color and adds flavor to the dish.
  6. You can either mix the eggs before adding them to the pan, or you can add the eggs straight into the pan so you keep a slight division of the yolk and the egg whites.
  7. If you add eggs directly to the pan, make sure to break the yolk.
  8. Cook the eggs thoroughly and make sure it's not runny
  9. You're done, you can serve the machacado with a side of refried beans, tortillas, and/or potato wedges.
  10. For dish presentation and display, you can add a couple slices of avocado
